Kale Slaw Spring Salad

What could be better than preparing a home-cooked meal using ingredients fresh from your garden? That’s why we’ve started this new feature on our Garden Blog, the Recipe of the Month Club! Each month, we’ll be sharing delicious recipes featuring seasonal veggies, herbs and fruits from some of the amazing cooks on our staff. Check out our very first entry, Kale Slaw Salad from Tammy Radke at our Lakewood store. It’s a light, delicious way to start the spring!

Kale Slaw Spring Salad by Tammy Radke, Lakewood StoreIngredients 5 cups fresh chopped kale 3 cups torn romaine 1 package cole slaw mix 1 cup fresh chopped broccoli 1 medium fennel bulb, thinly sliced ½ cup shredded red cabbage 1 cup feta cheese ¼ cup sesame seeds 1/3 cup extra virgin olive oil 3 Tbsp. sesame oil 2 Tbsp. honey 2 Tbsp Apple cider vinegar 2 Tbsp. lemon juice 1/3 cup pureed strawberriesDirections Combine salad ingredients in a large bowl. Combine dressing ingredients in a separate bowl. Dress the salad just before serving. Top with sliced strawberries if desired. Refrigerate leftovers.
